Ingredients
  

1 pound boneless, skinless chicken thighs

1 cup long-grain white rice, rinsed

1 medium onion, diced

3 cloves garlic, minced

2 cups chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

1 cup frozen peas (optional)

Fresh parsley, chopped, for garnish

Instructions
 

Sauté: Turn the Instant Pot to the sauté setting. Add a splash of olive oil. Season the chicken thighs with salt, pepper, paprika, and half the thyme and oregano. Sear the chicken in the pot for about 3-4 minutes on each side until golden brown. Remove the chicken and set aside.

    Cook Aromatics: In the same pot, add diced onion and sauté for 2-3 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

      Add Rice and Broth: Stir in the rinsed rice, remaining thyme, oregano, and chicken broth. Ensure the rice is evenly distributed.

        Layer Chicken: Place the seared chicken thighs on top of the rice mixture. Do not stir.

          Pressure Cook: Close the lid and set the Instant Pot to High Pressure for 10 minutes. Make sure the valve is set to sealing.

            Release Pressure: Once cooking is complete, allow natural pressure release for 5 minutes, then carefully switch the valve to venting to release any remaining pressure.

              Stir in Cream and Peas: Open the lid and add the heavy cream and frozen peas, gently stirring to combine. The mixture should be creamy and comforting. If it seems too thick, you can add a little more broth or water.

                Garnish and Serve: Taste for seasoning and adjust with more salt and pepper if needed. Garnish with fresh parsley before serving.
