Ingredients
  

1 cup all-purpose flour

1/2 cup almond flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/4 cup coconut oil, melted

1/2 cup maple syrup

2 tablespoons fresh lemon juice

Zest of 1 lemon

1 teaspoon vanilla extract

1 cup fresh blueberries (or frozen, if preferred)

Optional: Powdered sugar for dusting

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a mixing bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In another bowl, mix the melted coconut oil, maple syrup, fresh lemon juice, lemon zest, and vanilla extract. Stir until the mixture is smooth and well blended.

        Create the Dough: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix. The dough should be slightly sticky.

          Add Blueberries: Gently fold in the fresh blueberries, being cautious not to crush them.

            Shape Cookies: Using a tablespoon or a cookie scoop, drop dough balls onto the prepared baking sheet, spacing them about 2 inches apart.

              Flatten Slightly: Lightly press down on each cookie to flatten them slightly, as they won’t spread much during baking.

                Bake: Bake in the preheated oven for 12-15 minutes, or until the edges begin to turn golden. The centers may appear soft but will firm up as they cool.

                  Cool and Dust: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. If desired, dust with powdered sugar before serving.
