Ingredients

For the Cake:

2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter, softened

1 cup whole milk

2 large eggs

2 teaspoons vanilla extract

2 cups peeled, chopped apples (preferably Granny Smith or Honeycrisp)

For the Fritter Topping:

1 cup powdered sugar

2 tablespoons milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or line it with parchment paper for easy removal.

Prepare the Cake Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon. In another bowl, cream the softened butter until fluffy, then add the eggs one at a time, mixing well after each addition. Stir in the milk and vanilla extract until combined.

Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. Fold in the chopped apples gently.

Bake the Cake: Pour the batter into the prepared baking pan and smooth the top with a spatula. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Prepare the Fritter Topping: In a mixing bowl, whisk together the powdered sugar, milk, vanilla extract, and cinnamon until smooth. If the mixture is too thick, add a little more milk until you reach your desired consistency for a drizzle.

Glaze the Cake: Once the cake is cooled, drizzle the fritter topping over the top, allowing it to drip down the sides for that beautiful, rustic look.

Serve: Slice the cake into squares, and serve it warm or at room temperature. Pair it with a scoop of vanilla ice cream or a dollop of whipped cream for a cozy treat!
