1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

16 oz cream cheese, softened

¾ cup sugar

2 large eggs

1 cup ripe mango puree (fresh or canned)

1 teaspoon vanilla extract

2 cups whipped cream (for topping)

Fresh mango slices (for garnish)

Instructions
 

Prepare the Crust: In a bowl, mix the graham cracker crumbs, melted butter, and 2 tablespoons of sugar until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer.

    Bake the Crust: Preheat your oven to 325°F (163°C). Bake the crust for 10 minutes, then remove from the oven and allow to cool.

      Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and ¾ cup of sugar using a handheld mixer until smooth and creamy.

        Add Eggs: Incorporate the eggs one at a time, mixing on low speed until fully combined.

          Mango Puree and Vanilla: Add the mango puree and vanilla extract to the cream cheese mixture. Blend until smooth and well combined.

            Pour the Filling: Pour the cheesecake mixture over the cooled crust, smoothing the top with a spatula.

              Bake: Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are slightly golden. The center may still be a bit wobbly – that’s okay!

                Cool and Chill: Once baked, turn off the oven and crack the door, allowing the cheesecake to cool gradually for about an hour. Then, refrigerate for at least 4 hours or preferably overnight.

                  Top with Whipped Cream: Before serving, spread the whipped cream over the top of the cheesecake and garnish with fresh mango slices.

                    Serve & Enjoy: Slice the cheesecake and serve chilled for a refreshing summer treat!
