3 large eggs

Zest of 2 limes

½ cup fresh lime juice (about 3-4 limes)

1 cup ripe mango puree (approx. 2 ripe mangoes blended)

For the topping:

1 ½ cups whipped cream

1 cup fresh mango slices

Lime wedges for garnish

Optional: Toasted coconut flakes

Preheat the Oven: Begin by preheating your oven to 325°F (160°C).

    Prepare the Crust: In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated and have a sandy texture. Press this mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake in the preheated oven for 10 minutes, then remove and let cool.

      Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and granulated sugar using an electric mixer until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract, lime zest, lime juice, and mango puree until just combined and smooth.

        Combine and Pour: Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.
