3 ripe bananas, mashed

1/3 cup melted coconut oil (or unsalted butter)

1/2 cup maple syrup

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon salt

1 1/2 cups all-purpose flour

1/2 cup chopped walnuts or pecans (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas and melted coconut oil. Stir in the maple syrup, eggs, and vanilla extract until well combined.

      Combine Dry Ingredients: In a separate bowl, whisk together the baking soda, baking powder, ground cinnamon, and salt.

        Combine Everything: Gradually add the dry ingredients to the banana mixture, mixing until just blended. Be careful not to overmix; a few lumps are fine. If using, fold in the chopped walnuts or pecans.

          Fill Muffin Tins: Use a spoon or cookie scoop to fill each muffin cup about 2/3 full with the batter.

            Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
