1 lb ground chicken

1 cup finely chopped mushrooms (button or cremini)

1/2 cup breadcrumbs (Italian or panko)

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 large egg

2 cloves garlic, minced

1 tsp onion powder

1 tsp dried oregano

Salt and pepper, to taste

1 tbsp olive oil (for cooking)

1 jar (24 oz) marinara sauce (for serving)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Mushrooms: In a skillet over medium heat, add a splash of olive oil. Sauté the finely chopped mushrooms for about 5-7 minutes, until they are tender and moisture has evaporated. Set aside to cool slightly.

      Mix the Meatball Ingredients: In a large mixing bowl, combine the ground chicken, sautéed mushrooms, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, onion powder, oregano, salt, and pepper. Mix until just combined; do not overmix.

        Shape the Meatballs: Using your hands, shape the mixture into 1-inch meatballs and place them on the prepared baking sheet. You should have about 20-24 meatballs.

          Bake the Meatballs: Drizzle a small amount of olive oil over the meatballs. Bake in the preheated oven for 20-25 minutes, or until they are cooked through and golden brown.

            Heat the Marinara Sauce: While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat until warmed through.
