1 cup granulated sugar

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 cup strawberry soda (such as Sprite or 7UP)

⅓ cup vegetable oil

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and diced

½ cup powdered sugar (for frosting, optional)

1 tablespoon milk (for frosting, optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In a separate bowl, combine the strawberry soda, vegetable oil, and vanilla extract. Stir gently to combine, making sure not to let the soda lose too much carbonation.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir until just combined; do not overmix. Gently fold in the diced strawberries.

          Bake the Cake: Pour the batter into the prepared cake pan. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. The cake should also spring back when lightly touched.
