4 boneless, skinless chicken thighs

2 large onions, thinly sliced

3 cloves garlic, minced

1 cup Arborio rice (or long-grain rice)

4 cups low-sodium chicken broth

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon balsamic vinegar

1 teaspoon Worcestershire sauce

1 cup grated Gruyère cheese (or Switzerland cheese)

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Onions: In a large pot or Dutch oven, heat olive oil over medium heat. Add the sliced onions and a pinch of salt. Sauté for about 15-20 minutes, stirring occasionally, until the onions are caramelized and golden brown.

    Cook the Chicken: Push the onions to the side of the pot and add the chicken thighs. Season both sides with salt and pepper. Sear the chicken for about 5-7 minutes on each side, until golden brown. Remove chicken and set aside.

      Incorporate Garlic and Rice: To the pot, add minced garlic, stirring for about 30 seconds until fragrant. Then add the Arborio rice and stir well for about 1-2 minutes, allowing the rice to toast slightly.

        Add Broth and Flavorings: Pour in the chicken broth, balsamic vinegar, Worcestershire sauce, and fresh thyme. Stir everything together to combine.

          Combine Chicken and Simmer: Nestle the seared chicken thighs back into the pot, ensuring they are partially submerged in the liquid. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 25 minutes or until the rice is tender and has absorbed most of the liquid.

            Melt the Cheese: Once the rice is cooked, sprinkle the Gruyère cheese evenly over the chicken and rice. Cover the pot again and allow the cheese to melt for about 5 minutes.
