1 lb (450g) boneless chicken breast, cut into 1-inch cubes

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

Juice of 1 lemon

Salt and pepper to taste

Skewers (wooden or metal)

Optional: cherry tomatoes, bell pepper pieces, or zucchini slices for added veggies

Marinate the Chicken: In a large bowl, combine olive oil, minced garlic, rosemary, thyme, parsley, lemon juice, salt, and pepper. Add the chicken cubes and toss until fully coated. Cover with plastic wrap and let marinate in the refrigerator for at least 30 minutes, up to 2 hours for the best flavor.

    Prepare Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning. If using metal skewers, grease them lightly with oil.

      Assemble Skewers: Alternate threading the marinated chicken pieces and the optional veggies onto the skewers, ensuring even spacing for proper grilling.
