Ingredients

1 cup creamy peanut butter

1/2 cup unsweetened cocoa powder

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/4 cup coconut oil, melted

A pinch of salt

Optional: 1/4 cup chopped nuts (like almonds or pecans) for texture

Optional: Sea salt for sprinkling on top

Instructions

Prepare the Pan: Line an 8x8-inch square pan with parchment paper, leaving some overhang for easy removal. This will make it easier to cut the fudge into bites later.

Mix the Ingredients: In a medium mixing bowl, combine the creamy peanut butter, cocoa powder, powdered sugar, vanilla extract, melted coconut oil, and a pinch of salt. Use a spatula or fork to mix until smooth and well combined. If you’re adding chopped nuts, fold them in at this stage.

Spread the Mixture: Pour the mixture into the prepared pan and use the spatula to spread it evenly, pressing down lightly to ensure it fills the corners and is uniformly thick.

Chill: Place the pan in the refrigerator for at least 1-2 hours, or until the fudge is firm and set.

Cut Into Bites: Once the fudge has set, remove it from the pan using the parchment paper overhang. Place it on a cutting board and cut it into bite-sized pieces.

Optional Topping: If desired, sprinkle a pinch of sea salt over the cut pieces for an added flavor contrast.

Store: Store the fudge bites in an airtight container in the refrigerator for up to one week. Enjoy straight from the fridge for the best texture!
