Ingredients
  

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup jasmine rice, rinsed

1 can (14 oz) coconut milk

1 cup fresh pineapple chunks (or canned, drained)

1 medium red bell pepper, diced

1 small onion, finely chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon lime juice

2 tablespoons vegetable oil

Salt and pepper to taste

Fresh cilantro or green onions for garnish

Lime wedges for serving

Instructions
 

Marinate the Chicken: In a medium bowl, combine the bite-sized chicken, soy sauce, honey, lime juice, and a pinch of salt. Allow it to marinate for at least 15 minutes while you prepare the other ingredients.

    Cook the Rice: In a medium saucepan, bring 1 ½ cups of water to a boil. Add the rinsed jasmine rice, reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the water is absorbed. Fluff with a fork and set aside.

      Sauté the Aromatics: In a large skillet or wok, heat the vegetable oil over medium heat. Add the chopped onion, red bell pepper, garlic, and ginger. Sauté for about 3-5 minutes, or until the vegetables are softened and fragrant.

        Add the Chicken: Increase the heat to medium-high and add the marinated chicken to the skillet. Cook until the chicken is browned on all sides and cooked through, about 7-10 minutes.

          Incorporate the Coconut and Pineapple: Pour in the coconut milk and add the pineapple chunks. Stir everything together gently and let it simmer for an additional 5 minutes, allowing the flavors to meld. Season with salt and pepper to taste.

            Combine with Rice: Gently fold the cooked jasmine rice into the chicken and pineapple mixture until well combined. Let it cook together for another 2 minutes.
