Ingredients
  

2 large chicken breasts

1 cup small pretzels (crushed into coarse crumbs)

1/2 cup seasoned breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Cooking spray or olive oil for drizzling

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    In a shallow bowl, combine the crushed pretzels, seasoned breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well and set aside.

      In another shallow bowl, whisk together the eggs and Dijon mustard until well blended.

        Prepare a third bowl with all-purpose flour seasoned with a pinch of salt and pepper.

          Take each chicken breast and tenderize them slightly using a meat mallet for even cooking.

            Dredge each chicken breast first in the seasoned flour, shaking off the excess.

              Dip the floured chicken into the egg mixture, allowing any excess to drip off.

                Finally, coat the chicken with the pretzel crumb mixture, pressing gently to adhere the crumbs well.

                  Place the crusted chicken on the prepared baking sheet. Lightly spray or drizzle olive oil over the tops for a crispy finish.

                    Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the coating is golden brown and crunchy. (Internal chicken temperature should reach 165°F/75°C.)

                      Remove from the oven and let the chicken rest for a few minutes before slicing.

                        Garnish with freshly chopped parsley for a burst of color and serve immediately with your choice of dipping sauce or sides.
