1 cup fresh raspberries (plus extra for garnish)

1/4 cup granulated sugar

1 tablespoon freshly squeezed lemon juice

1 cup sparkling water or soda water

1/2 cup heavy cream

1 teaspoon vanilla extract

Ice cubes

Fresh mint leaves (for garnish)

Make the Raspberry Syrup: In a small saucepan over medium heat, combine the fresh raspberries and sugar. Stir gently until the raspberries begin to break down and release their juices, about 5 minutes. Once the mixture is bubbling, remove it from heat and stir in the lemon juice. Let it cool for a few minutes before straining it through a fine mesh sieve to remove the seeds, creating a smooth raspberry syrup. Set aside.

    Whip the Cream: In a mixing bowl, pour the heavy cream and add the vanilla extract. Using a hand mixer or whisk, whip the cream until soft peaks form. Be careful not to overwhip, as you want it to remain silky and creamy.

      Assemble the Drink: In a tall glass, add a few ice cubes. Pour about 2 tablespoons of the raspberry syrup over the ice. Slowly pour in the sparkling water, filling the glass about three-quarters full. Adjust the amount of syrup according to your preferred sweetness.
