Ingredients
  

8 oz (225 g) pasta (your choice - fettuccine, penne, or spaghetti)

1 cup fresh spinach, chopped

1 can (14 oz) artichoke hearts, drained and chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

2 cloves garlic, minced

2 tbsp olive oil

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh basil or parsley for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest. Set aside.

    Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes (if using), sauté for about 1 minute until fragrant but not browned.

      Add Spinach and Artichokes: Stir in the chopped spinach and artichoke hearts. Cook for 3-4 minutes until the spinach wilts and the artichokes are heated through.

        Make the Sauce: Lower the heat and pour in the heavy cream. Stir in the Parmesan cheese and mozzarella cheese until melted and smooth. Add salt and pepper to taste.

          Combine: Add the cooked pasta to the sauce, tossing until the pasta is well coated. If the sauce is too thick, gradually add the reserved pasta water until you reach the desired consistency.

            Serve: Plate the pasta and garnish with fresh basil or parsley and an extra sprinkle of Parmesan if desired.
