2 cups cooked jasmine rice (preferably cold)

1 lb chicken breast, diced into small pieces

2 tablespoons vegetable oil

2 large eggs, lightly beaten

1 cup mixed vegetables (peas, carrots, corn)

3 green onions, sliced

3 cloves garlic, minced

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 teaspoon sesame oil

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Prepare the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the diced chicken and season with salt and pepper. Cook for 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

    Scramble the Eggs: In the same skillet, add the remaining tablespoon of oil. Pour in the beaten eggs and scramble until fully cooked. Remove the eggs from the skillet and set aside with the chicken.

      Sauté Vegetables: Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant. Then, add the mixed vegetables and stir-fry for 2-3 minutes until they are tender.

        Combine Ingredients: Add the cold jasmine rice to the skillet, breaking up any clumps. Stir-fry for 5 minutes, ensuring the rice is heated through and mixed well with the veggies.

          Add Sauces: Pour in the soy sauce, oyster sauce, and sesame oil, mixing everything thoroughly. Return the cooked chicken and scrambled eggs to the skillet, along with the sliced green onions. Stir to combine, cooking for an additional 2-3 minutes to heat everything through.

            Final Touches: Taste and adjust the seasoning with more salt or soy sauce as desired. If using, garnish with fresh cilantro before serving.
