Ingredients
  

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

2 cups fresh rhubarb, chopped into small pieces

1/2 cup walnuts or pecans, chopped (optional)

Instructions
 

Preheat the oven to 350°F (175°C. Grease and flour a 9x5 inch loaf pan or line it with parchment paper for easy removal.

    In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon until well combined.

      In another mixing bowl, beat together the granulated sugar, brown sugar, melted butter, and eggs until fluffy. Stir in the vanilla extract and buttermilk until smooth.

        Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to over-mix; a few lumps are okay.

          Fold in the chopped rhubarb and nuts, if using, until evenly distributed in the batter.

            Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

              Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.

                Cool the bread in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

                  Slice and serve warm or at room temperature. Enjoy this delightful bread at brunch with a spread of cream cheese or butter, or simply on its own!
