1 ½ cups crushed Graham crackers (about 10 full sheets)

½ cup unsweetened shredded coconut, toasted

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the Cheesecake Filling:

24 oz cream cheese, softened (3 packages)

1 cup granulated sugar

1 cup sour cream

½ cup heavy cream

3 large eggs

1 teaspoon vanilla extract

For the Topping:

1 cup caramel sauce

1 cup unsweetened shredded coconut, toasted

½ cup chocolate sauce for drizzling

½ cup chopped pecans or toasted almonds (optional)

Instructions
 

Step 1: Prepare the Crust

    Preheat your oven to 350°F (175°C).

      In a medium bowl, mix together the crushed Graham crackers, toasted shredded coconut, granulated sugar, and melted butter until well combined.

        Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

          Bake in the preheated oven for 10 minutes. Remove and let it cool while you prepare the filling.

            Step 2: Make the Cheesecake Filling

              In a large mixing bowl, beat the softened cream cheese and granulated sugar with an electric mixer on medium speed until smooth and creamy (about 2-3 minutes).

                Add the sour cream, heavy cream, and vanilla extract; mix until well incorporated.

                  On low speed, add the eggs one at a time, mixing just until combined after each addition. Do not overmix.
