1 lb boneless skinless chicken thighs

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups romaine lettuce, chopped

1/2 cup Caesar dressing

1/2 cup grated Parmesan cheese

1/4 cup cherry tomatoes, halved

8 small soft tortillas (corn or flour)

Croutons, for topping (optional)

Fresh parsley, chopped, for garnish

Instructions
 

Prepare the Chicken:

    - In a mixing bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken thighs, ensuring they are fully coated in the spice mixture.

      Cook the Chicken:

        - Heat a skillet over medium-high heat. Once hot, add the seasoned chicken thighs to the skillet. Cook for about 6-7 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Remove the chicken from the skillet and let it rest for a few minutes.

          Smash the Chicken:

            - Using two forks or a meat mallet, shred or smash the cooked chicken into bite-sized pieces in the skillet. This will create a delightful texture for the tacos.

              Prepare the Salad:

                - In a large mixing bowl, combine the chopped romaine lettuce, Caesar dressing, grated Parmesan, and cherry tomatoes. Toss well to coat the lettuce evenly with the dressing while incorporating the cheese and tomatoes.

                  Assemble the Tacos:

                    - Warm the tortillas in a dry skillet for about 30 seconds on each side until they're pliable. Place a generous amount of the smashed chicken in the center of each tortilla. Top with the Caesar salad mixture.

                      Finishing Touches:
