Ingredients
  

6 large eggs

3 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 teaspoon chili garlic sauce (adjust to your heat preference)

1/2 teaspoon smoked paprika

1 teaspoon apple cider vinegar

Salt and pepper, to taste

Fresh chives, finely chopped (for garnish)

Red pepper flakes (for garnish)

Instructions
 

Boil the Eggs: Place the eggs in a saucepan and cover with water. Bring to a rolling boil over medium-high heat. Once boiling, cover the saucepan and remove it from heat. Let the eggs sit for 12 minutes.

    Cool the Eggs: After 12 minutes, transfer the eggs to a bowl of ice water to cool for about 5 minutes. This helps prevent the yolks from turning greenish.

      Peel the Eggs: Once cooled, gently tap the eggs on the countertop and peel off the shells. Rinse under cold water to remove any shell bits and pat dry with a paper towel.

        Prepare the Filling: Slice the eggs in half lengthwise and remove the yolks, placing them in a mixing bowl. In the bowl, mash the yolks with a fork until fine.

          Mix the Ingredients: Add mayonnaise, Dijon mustard, chili garlic sauce, smoked paprika, apple cider vinegar, salt, and pepper to the mashed yolks. Mix until smooth and creamy. Adjust seasoning to taste.

            Fill the Eggs: Using a spoon or a piping bag, fill each egg white half generously with the yolk mixture.
