1 cup cream cheese, softened

1/2 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup fresh strawberries, diced (or freeze-dried strawberries, crushed)

1/2 cup white chocolate chips (optional)

Powdered sugar for dusting (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Cream the Cheeses: In a large mixing bowl, combine the softened cream cheese and butter. Beat them together using an electric mixer on medium speed until the mixture is smooth and creamy.

      Add Sugars and Egg: Gradually add the granulated sugar and brown sugar to the cream cheese mixture, mixing until fully incorporated. Then, add the egg and vanilla extract, beating until well combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing just until combined.

          Fold in Strawberries and Chips: Gently fold in the diced strawberries and white chocolate chips (if using) until evenly distributed.

            Scoop the Dough: Using a cookie scoop or tablespoon, drop generous portions of dough onto the prepared baking sheet, leaving some space between each cookie as they will spread while baking.

              Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden, and the centers look set but still soft.

                Cool and Dust: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely. If desired, dust with powdered sugar before serving.
