Ingredients

1 cup unsalted butter, melted

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

1 tablespoon lemon zest (from about 1 lemon)

1/4 cup fresh lemon juice (about 1 lemon)

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup fresh strawberries, chopped (approximately 8-10 medium strawberries)

Optional: powdered sugar for dusting

Instructions

Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper for easy removal.

Mix the Wet Ingredients: In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk until well combined and smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon zest, and lemon juice.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

Combine Wet and Dry Mixtures: Gradually add the dry mixture into the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.

Fold in the Strawberries: Carefully fold in the chopped strawberries, ensuring they are evenly distributed throughout the batter.

Bake the Blondies: Pour the batter into the prepared baking pan, spreading it into an even layer. Bake for 25-30 minutes, or until the edges are slightly golden and a toothpick inserted in the center comes out clean.

Cool Down: Allow the blondies to cool completely in the pan on a wire rack. Once cooled, you can lift them out of the pan using the parchment paper (if used) and transfer to a cutting board.

Serve: Cut into squares and serve as is, or lightly dust with powdered sugar before serving for an extra touch.
