For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the Cheesecake Filling:

16 oz (2 packages) cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs, at room temperature

1 cup sour cream

For the Strawberry Topping:

2 cups fresh strawberries, hulled and sliced

¼ cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

2 tablespoons water

For Whipped Cream:

1 cup heavy whipping cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

Instructions
 

Prepare the Crust:

    - Preheat your oven to 325°F (160°C).

      - In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined and crumbly.

        - Press the mixture firmly into the bottom of a 9-inch springform pan, creating an even layer. Bake for 10 minutes, then set aside to cool.

          Make the Cheesecake Filling:

            - In a large bowl, beat the softened cream cheese until smooth and creamy using an electric mixer.

              - Gradually add the granulated sugar and vanilla extract, mixing until combined.

                - Add the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as necessary.

                  - Finally, mix in the sour cream until smooth.

                    Assemble the Cheesecake:

                      - Pour the cheesecake mixture over the cooled graham cracker crust in the springform pan.

                        - Smooth the top with a spatula and tap the pan gently on the counter to remove air bubbles.

                          - Bake in the preheated oven for about 55-60 minutes, until the center is set but still slightly wobbly. Turn off the oven and let it cool in the oven for 1 hour with the door slightly ajar.

                            Prepare the Strawberry Topping:

                              - In a saucepan over medium heat, combine the sliced strawberries, granulated sugar, lemon juice, cornstarch, and water.

                                - Cook for about 5-7 minutes until the strawberries have released their juices and the mixture thickens slightly. Remove from heat and let cool.

                                  Make the Whipped Cream:

                                    - In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract on medium-high speed until stiff peaks form.

                                      Assemble the Dessert:

                                        - Once the cheesecake is completely cooled, remove it from the springform pan.

                                          - Spread the cooled strawberry topping over the cheesecake and drizzle with the prepared whipped cream.

                                            Chill and Serve:

                                              - Refrigerate the cheesecake for at least 2-4 hours before serving to allow it to set properly.
