Ingredients
  

For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the Cheesecake Filling:

24 ounces cream cheese, softened

1 cup granulated sugar

⅓ cup sour cream

2 large eggs

1 tablespoon vanilla extract

2 tablespoons all-purpose flour

For the Strawberry Swirl:

1 cup fresh strawberries, hulled and halved

¼ cup granulated sugar

1 tablespoon lemon juice

Instructions
 

Prepare the Crust:

    - Preheat your oven to 325°F (163°C).

      - In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined and crumbly.

        - Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool while preparing the filling.

          Make the Strawberry Swirl:

            - In a saucepan over medium heat, combine the strawberries, sugar, and lemon juice. Cook for about 5-7 minutes until the strawberries are softened and the mixture is syrupy.

              - Remove from heat and let cool slightly. Once cool, use a fork or blender to puree the mixture until smooth.

                Prepare the Cheesecake Filling:

                  - In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

                    - Gradually add the sugar, mixing until well combined.

                      - Add the sour cream, eggs one at a time, vanilla extract, and flour. Mix until just combined, taking care not to overmix.

                        Layer and Swirl:

                          - Pour half of the cheesecake mixture over the cooled crust.

                            - Drizzle half of the strawberry puree over the filling and use a knife or skewer to create a swirl effect.

                              - Pour the remaining cheesecake filling on top, then add the rest of the strawberry puree and swirl again.

                                Bake the Cheesecake:

                                  - Bake in the preheated oven for 50-60 minutes until the center is set but a little wobbly.

                                    - Turn off the oven and crack the door open, letting the cheesecake cool in the oven for 1 hour to prevent cracking.

                                      Chill:

                                        - Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.

                                          Serve:

                                            - Carefully remove the cheesecake from the springform pan.

                                              - Slice and serve chilled, optionally garnishing with fresh strawberries or whipped cream.
