For the Sugar Cookie Crust:

2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

16 ounces cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 tablespoon all-purpose flour

1/2 cup sour cream

For the Topping:

Whipped cream

Colorful sprinkles or crushed sugar cookies

Preheat the Oven: Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and set it aside.

    Make the Sugar Cookie Crust:

      - In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

        - In a large mixing bowl, cream the softened butter and sugar until light and fluffy.

          - Add the egg and vanilla extract, mixing well until combined.

            - Gradually add the flour mixture to the wet ingredients and mix until a dough forms.

              - Press the sugar cookie dough into the bottom of the prepared springform pan to form an even layer.

                Prepare the Cheesecake Filling:

                  - In a large bowl, beat the softened cream cheese until smooth.

                    - Add in the granulated sugar and vanilla extract, mix until combined.

                      - Add the eggs one at a time, mixing well after each addition.

                        - Mix in the tablespoon of flour and the sour cream until smooth.

                          Assemble the Cheesecake:

                            - Pour the cheesecake filling over the sugar cookie crust, smoothing the top with a spatula.

                              - Bake in the preheated oven for 45-50 minutes, or until the edges are set and the center is slightly jiggly.

                                Cool & Chill:

                                  - Remove the cheesecake from the oven and let it cool in the pan for about 1 hour.

                                    - Once cooled, refrigerate the cheesecake for at least 4 hours or overnight to set.

                                      Serve:

                                        - Once chilled, carefully remove the cheesecake from the springform pan.
