1 lb fresh salmon fillet, cut into 1-inch cubes

2 tablespoons olive oil

2 tablespoons honey

Zest of 1 lemon

Zest of 1 orange

Juice of 1 lemon

Juice of 1 orange

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

Fresh parsley, chopped (for garnish)

1 cup cherry tomatoes

1 bell pepper, cut into 1-inch pieces

Instructions
 

Marinate the Salmon: In a large bowl, whisk together the olive oil, honey, lemon zest, orange zest, lemon juice, orange juice, minced garlic, salt, black pepper, and smoked paprika. Add the salmon cubes and gently toss to coat. Cover and refrigerate for at least 30 minutes to 1 hour.

    Prepare the Skewers: Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.

      Assemble the Skewers: Thread the marinated salmon onto skewers, alternating with cherry tomatoes and bell pepper pieces. Leave a little space between each piece for even cooking.

        Grill the Skewers: Place the skewers on the preheated grill and cook for 8-10 minutes, turning occasionally, until the salmon is cooked through and flakes easily with a fork.

          Serve: Once done, remove the skewers from the grill and garnish with fresh chopped parsley. Serve warm with extra lemon wedges on the side.
