8 oz Summer sausage, diced

8 oz Andouille sausage, sliced

1 medium onion, chopped

1 bell pepper (red or green), diced

2 cloves garlic, minced

1 medium zucchini, diced

1 cup corn kernels (fresh, frozen, or canned)

1 tsp paprika

1/2 tsp cayenne pepper (optional, for heat)

Salt and pepper to taste

2 tbsp olive oil

1/4 cup fresh parsley, chopped (for garnish)

4 large eggs (optional)

Prepare Ingredients: Start by dicing the summer sausage and slicing the Andouille sausage. Chop the onion, bell pepper, zucchini, and mince the garlic.

    Heat the Skillet: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced summer sausage and sliced Andouille sausage. Cook for about 5-7 minutes, stirring occasionally, until the sausages are browned.

      Add Vegetables: In the same skillet, add the chopped onion, diced bell pepper, and minced garlic. Sauté for about 3-4 minutes until the onion is translucent and fragrant.

        Incorporate Zucchini and Corn: Add the diced zucchini and corn kernels to the skillet. Sprinkle in the paprika, cayenne pepper (if using), and season with salt and pepper. Stir well to combine all ingredients. Cook for another 5-7 minutes until the zucchini is tender.

          Optional Eggs Topping: If you’d like to add eggs, create 4 small wells in the mixture and crack an egg into each well. Cover the skillet with a lid and let the eggs cook to your liking (approximately 3-5 minutes for runny yolks).
