Ingredients

4 boneless, skinless chicken breasts

1/4 cup olive oil

Juice and zest of 2 large oranges

Juice and zest of 1 lemon

2 cloves garlic, minced

2 tablespoons honey

1 teaspoon paprika

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare Marinade: In a medium bowl, whisk together olive oil, orange juice and zest, lemon juice and zest, minced garlic, honey, paprika, oregano, salt, and pepper to create a zesty marinade.

Marinate Chicken: Place the chicken breasts in a large zip-lock bag or shallow dish and pour the marinade over them. Seal the bag (or cover the dish) and refrigerate for at least 1 hour, preferably 2-4 hours for maximal flavor.

Preheat Grill: Preheat your grill to medium-high heat (about 400°F / 200°C).

Grill Chicken: Remove the chicken from the marinade, letting the excess drip off. Grill the chicken for about 6-8 minutes on each side, or until fully cooked, reaching an internal temperature of 165°F (75°C).

Rest and Serve: Once cooked, transfer the chicken to a platter and let it rest for 5 minutes. Garnish with freshly chopped parsley before serving.

Optional Serving Suggestions: Pair with a refreshing summer salad, sautéed seasonal vegetables, or grilled corn on the cob for a complete summer supper experience.
