Peaches are the star of this summer salad. Their sweet, juicy flesh not only adds a burst of flavor but also a beautiful golden hue that enhances the dish’s visual appeal. Peaches are a stone fruit, belonging to the genus Prunus, which also includes cherries, plums, and almonds. Their rich flavor profile makes them an ideal candidate for grilling, as the heat caramelizes their natural sugars, intensifying their sweetness and creating a smoky depth.

1/4 cup balsamic glaze

1/4 cup toasted walnuts, chopped

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Preheat your grill to medium heat.

Brush the cut sides of the peaches with olive oil and sprinkle with salt and pepper.

Place the peaches on the grill, cut side down. Grill for about 3-4 minutes, until grill marks appear and the peaches are slightly softened.

In a large salad bowl, place the arugula as a base.

Tear the burrata into pieces and nestle it among the arugula.

Arrange the grilled peach halves on top of the salad.

Drizzle the balsamic glaze over the salad and sprinkle with toasted walnuts.
