Ingredients
  

2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup whole milk

3 large eggs

1 tbsp baking powder

1 tsp vanilla extract

1 tsp almond extract

½ tsp salt

1 cup fresh oranges, zested and juiced

½ cup fresh raspberries

½ cup fresh blueberries

½ cup shredded coconut (unsweetened)

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

      Cream Butter and Sugar: In a large bowl, use an electric mixer to cream the softened butter and granulated sugar together until light and fluffy (about 3-4 minutes).

        Add Eggs and Extracts: Add the eggs, one at a time, mixing well after each addition. Then, mix in the vanilla and almond extracts.

          Combine Wet and Dry Ingredients: Gradually add the flour mixture to the butter mixture, alternating with the milk, starting and ending with the flour. Mix until just combined.

            Add Citrus and Berries: Gently fold in the orange zest, orange juice, raspberries, blueberries, and shredded coconut until evenly distributed in the batter.

              Pour and Bake: Divide the batter equally between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

                Cool the Cakes: Remove from the oven and let the cakes cool in the pans for about 10 minutes. Then, turn them out onto wire racks to cool completely.

                  Frost (Optional): Frost with your favorite citrus buttercream or a simple whipped cream for a light finish. Decorate with edible flowers and some extra berries for an added touch.
