Ingredients

4 large sweet potatoes, peeled and cubed

1/2 cup unsalted butter, melted

1/2 cup brown sugar, packed

1/4 cup milk (or almond milk for a dairy-free option)

2 large eggs

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1 cup mini marshmallows (or pecans for a nutty topping)

1/2 cup crushed graham crackers (for topping)

2 tablespoons melted butter (for graham cracker topping)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook Sweet Potatoes: Place the cubed sweet potatoes in a large pot of water and bring to a boil. Cook until tender, about 15-20 minutes. Drain and allow to cool slightly.

Mash Sweet Potatoes: Transfer the cooked sweet potatoes into a large mixing bowl. Use a potato masher or a fork to mash them until smooth.

Combine Wet Ingredients: In a separate bowl, mix together the melted butter, brown sugar, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt. Stir until well combined.

Mix Everything Together: Pour the wet mixture into the bowl with the mashed sweet potatoes. Stir until everything is fully combined and smooth.

Prepare the Casserole Dish: Grease a 9x13 inch baking dish with a little butter or cooking spray. Spread the sweet potato mixture evenly in the dish.

Add Toppings: If using marshmallows, sprinkle them evenly over the sweet potato mixture. If you're opting for a graham cracker topping, combine the crushed graham crackers with the melted butter and sprinkle it over the mixture.

Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until heated through and the marshmallows are golden brown or the graham cracker topping is crispy.

Cool and Serve: Allow the casserole to cool slightly before serving. This dish pairs wonderfully with turkey, ham, or any holiday main dish!
