2 ripe mangoes, peeled and julienned

1 cup red bell pepper, thinly sliced

1 cup cucumber, thinly sliced (preferably English cucumber)

1 cup shredded carrots

1 cup fresh cilantro, chopped

1/2 cup roasted peanuts, chopped

2 red chilies, thinly sliced (adjust based on heat preference)

2 tablespoons fish sauce (or soy sauce for a vegan option)

1 tablespoon lime juice

1 tablespoon honey or maple syrup (for vegan)

1 teaspoon sesame oil

Salt and pepper to taste
