8 oz spaghetti

1 lb ground beef (or turkey for a lighter option)

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade)

1 can (14 oz) diced tomatoes with green chilies

1 cup beef broth (or chicken broth)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (canned or frozen)

1 cup shredded cheddar cheese

1/2 cup sour cream

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Optional toppings: sliced jalapeños, avocado, and lime wedges

Instructions
 

Cook the Spaghetti: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.

    Brown the Meat: In a large skillet over medium heat, add the ground beef. Cook until it's browned and no longer pink, breaking it up with a spatula as it cooks (about 5-7 minutes).

      Sauté Aromatics: Add the diced onion to the skillet with the browned beef. Cook for 3-4 minutes, until the onion is softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

        Season and Simmer: Sprinkle in the taco seasoning and stir to coat the meat and onions. Add the diced tomatoes with green chilies, beef broth, black beans, and corn. Stir everything together and bring to a gentle simmer. Allow to cook for about 5 minutes, letting the flavors meld.

          Combine with Spaghetti: Add the cooked spaghetti to the skillet, tossing everything together to ensure the spaghetti is well coated with the sauce. Cook for an additional 2 minutes over low heat. Season with salt and pepper to taste.

            Serve Hot: Remove from heat and stir in half of the shredded cheddar cheese until melted and blended.

              Garnish and Enjoy: Serve immediately, topped with remaining cheese, a dollop of sour cream, and fresh cilantro. Add any additional toppings such as sliced jalapeños or avocado, and serve with lime wedges on the side.
