2 cups chopped fresh rhubarb

1 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

½ cup rolled oats

½ cup packed brown sugar

1 teaspoon ground cinnamon

½ teaspoon baking soda

½ cup unsalted butter (melted)

1/4 teaspoon salt

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish.

    Prepare the Rhubarb Filling: In a medium saucepan, combine the chopped rhubarb, granulated sugar, lemon juice, and vanilla extract. Cook over medium heat for about 5-7 minutes until the rhubarb is softened and the mixture is bubbly. Remove from heat and set aside to cool slightly.

      Make the Crust and Topping: In a large mixing bowl, combine the flour, rolled oats, brown sugar, cinnamon, baking soda, and salt. Gradually add the melted butter, mixing until the mixture resembles coarse crumbs.

        Assemble the Bars: Press half of the crumble mixture firmly into the bottom of the prepared baking dish to form the crust. Spread the rhubarb filling evenly over the crust. Sprinkle the remaining crumble mixture on top of the rhubarb filling.

          Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes or until the top is golden brown.

            Cool and Serve: Allow the bars to cool completely in the pan before cutting into squares. Serve warm or at room temperature, and enjoy!
