Ingredients

1 pound ribeye steak, thinly sliced

1 large onion, sliced

1 large green bell pepper, sliced

1 tablespoon olive oil

Salt and black pepper, to taste

4 slices provolone cheese (or cheese whiz for a classic touch)

4 hoagie rolls

Optional: sliced mushrooms, jalapeños for added spice

Instructions

Prep the Steak: Freeze the ribeye steak for about 30 minutes to firm it up, making it easier to slice thinly. Once firm, use a sharp knife to slice the steak into thin strips.

Cook the Vegetables: In a large skillet, heat the olive oil over medium heat. Add in the sliced onions and bell peppers (and mushrooms, if using). Sauté for about 5-7 minutes until they are softened and caramelized. Season with a pinch of salt and pepper. Remove the veggies from the skillet and set them aside.

Cook the Steak: In the same skillet over medium-high heat, add the sliced ribeye steak. Season with salt and pepper. Stirring frequently, cook for about 3-5 minutes until the steak is browned but still tender.

Combine Ingredients: Return the cooked onions and peppers back to the skillet with the steak. Mix everything together thoroughly and let it warm for another minute.

Melt the Cheese: Lower the heat to medium, and divide the steak and veggie mixture into four sections in the skillet. Place a slice of provolone cheese on each section. Cover the skillet with a lid for about 2 minutes, allowing the cheese to melt.

Assemble the Sandwiches: While the cheese is melting, warm the hoagie rolls either in the oven or on a skillet. Once the cheese has melted, use a spatula to scoop the steak and cheese mixture onto each hoagie roll.

Final Touch: For an extra flavor boost, drizzle some hot sauce or add jalapeños before serving.

Serve: Cut the cheesesteaks in half and serve immediately with your favorite sides!
