Ingredients

8 oz elbow macaroni

1 can (5 oz) tuna in water, drained

1 cup cherry tomatoes, halved

1/2 cup diced red onion

1 cup diced celery

1/4 cup sweet pickle relish

1/2 cup mayonnaise

2 tbsp Dijon mustard

1 tbsp apple cider vinegar

1 tsp garlic powder

1/2 tsp black pepper

Salt to taste

Fresh parsley for garnish

Instructions

Cook the Pasta: In a large pot of salted boiling water, add the elbow macaroni. Cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Vegetables: While the pasta is cooking, chop the red onion, celery, and halve the cherry tomatoes. Set aside in a large mixing bowl.

Mix the Tuna and Dressing: In a separate bowl, combine the drained tuna, mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, black pepper, and salt to taste. Mix until well blended.

Combine Ingredients: Add the cooled macaroni to the bowl with the vegetables. Gently fold in the tuna mixture until everything is evenly coated.

Add Relish: Stir in the sweet pickle relish for a hint of sweetness and additional texture. Adjust seasoning if needed.

Chill and Serve: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld. Before serving, garnish with fresh parsley.

Enjoy: Serve chilled as a side dish or a light lunch!
