1 lb ground beef (80/20)

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 cup bell peppers (red, green, or yellow), diced

1 cup zucchini, diced

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper, to taste

1 cup cooked rice (white or brown)

1 cup black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1/2 cup shredded cheese (cheddar or Mexican blend)

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Hot sauce (optional)

Instructions
 

In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add minced garlic and sauté for another 1-2 minutes until fragrant.

    Increase the heat to medium-high and add ground beef to the skillet. Cook, breaking it up with a spatula, until browned and no longer pink, about 7-10 minutes.

      Stir in the diced bell peppers and zucchini, cooking for another 5 minutes until the vegetables are tender.

        Season the mixture with smoked paprika, cumin, chili powder, salt, and pepper. Cook for an additional 2-3 minutes, ensuring everything is well combined.

          In a separate bowl, prepare your base by adding a scoop of cooked rice. Layer on the cooked ground beef and vegetable mixture.

            Top each bowl with black beans, corn, shredded cheese, and sliced avocado. Garnish with fresh cilantro and serve with lime wedges on the side. Drizzle with hot sauce if desired.
