Ingredients
  

1 lb large shrimp, peeled and deveined

1/4 cup olive oil

Juice of 2 lemons

Zest of 1 lemon

3 cloves garlic, minced

2 tablespoons fresh parsley, finely chopped

1 teaspoon fresh thyme leaves

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

8 wooden or metal skewers

Lemon wedges for serving

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, chopped parsley, thyme, salt, black pepper, and red pepper flakes (if using).

    Marinate the Shrimp: Add the shrimp to the bowl with the marinade. Toss until the shrimp are evenly coated. Cover and refrigerate for at least 30 minutes, but not more than 2 hours.

      Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C). If using wooden skewers, soak them in water for 30 minutes to prevent burning.

        Skewer the Shrimp: Thread the marinated shrimp onto the skewers, about 4-5 shrimp per skewer.

          Grill the Shrimp: Place the skewers on the hot grill. Grill for about 2-3 minutes on each side or until the shrimp are pink and opaque but not overcooked.

            Serve: Remove from the grill and serve immediately with lemon wedges on the side. Enjoy your meal with a fresh salad or grilled vegetables for a complete summer dinner!
