Ingredients
  

1 cup quinoa, rinsed

2 cups vegetable broth or water

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 bell pepper (any color), diced

1 avocado, sliced

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

Juice of 1 lemon

3 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Instructions
 

In a medium saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it cool.

    In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, and parsley.

      Once the quinoa has cooled slightly, add it to the bowl with the vegetables. Gently stir to combine.

        In a small bowl, whisk together the lemon juice, olive oil, garlic powder, salt, and pepper. Drizzle this dressing over the quinoa and veggies, tossing gently to coat everything evenly.

          Serve the quinoa bowl topped with sliced avocado and crumbled feta cheese, if desired.
